  5. Bake the cookies. Preheat the oven to 250–265°F (120–130°C). Place the cookies on a baking sheet lined with parchment paper. Put the baking sheet on the top rack and bake for 20–30 minutes. Check for doneness with a toothpick and make sure they don’t burn. The ideal baking temperature is about 300°F (150°C); at 355°F (180°C), THC breaks down and the cookies may cause drowsiness or headaches.
  6. Storage. Once the cookies are ready, let them cool and store them in an airtight container in the refrigerator. They’ll keep for at least six months (I’ve never had them last longer—they get eaten too fast!). You can also store them in the freezer.
